July = Blueberries!
I love to eat blueberries right from the bush, but here’s my favorite recipe for blueberries!
Blueberry Muffins
1/2 cup butter
3/4 cup sugar
1 egg
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 cups blueberries
Preheat oven to 400 degrees. Oil large muffin tins. Cream together butter and sugar in a large bowl. Add the egg, beating well. In a separate bowl combine flour, baking powder, and salt. Add to the creamed mixture alternatively with the milk. Fold in blueberries. Fill prepared muffin tins 2/3 full.
Topping
1/2 cup sugar
1/4 cup butter, softened
1/3 cup all-purpose flour
1/2 tsp cinnamon
In a small bowl combine sugar, butter, flour and cinnamon until crumbly. Sprinkle topping over muffin batter.
Bake in a 400 degree oven for 20 – 25 minutes. Makes 1 dozen.
